Nut mace
Mace is the dried red aril that surrounds the nutmeg seed. Same fruit, different layer, different spice.
Source: Comes from the nutmeg tree (Myristica fragrans). One fruit gives two spices—mace outside, nutmeg inside.
Appearance: Bright red when fresh, turns orange-yellow when dried. Sold as blades or ground.
Flavor: Similar to nutmeg but lighter, warmer, and more refined. Less bitterness, more aroma. If nutmeg is bold, mace is controlled.
Use: Common in biryanis, curries, spice blends, sausages, bakery items, and pickles. Preferred when you want fragrance without heaviness.
Form: Blades retain aroma better. Ground mace loses punch fast—same rule as nutmeg.
